One of the most representative varieties from the Aix-en-Provence region .
 The fruit is shaped like a pear. This is the mildest and most fruity olive oil of the three. It has a distinctive aroma of almonds and green bananas.

Suitable ingredients and dishes

It goes well with white fish, bechamel sauce for gratin, sweets (instead of butter), and Japanese cuisine (tofu, soy sauce, dashi stock).
